japchae


based on wikipedia, Japchae (jabchae, chapchae) is a Korean dish made from sweet potato noodles (called dangmyeon, 당면), stir fried in sesame oil with various vegetables (typically thinly sliced carrots, onion, spinach, and mushrooms), sometimes served with beef, and flavoured with soy sauce, and sweetened with sugar. It is usually served garnished with sesame seeds and slivers of chili. It may be served either hot or cold.

ive tried this dish two times at Korean restaurant. its very simple dish. truth is, i have this kind of food in my country. it almost taste the same. mom almost cooks this every week hheheheh the different is just the noodles. i walked to the Korean grocery store closed to my office to buy the noodles. this weekend, i made Japchae out of curiosity ! here we go! 
  • 200 gr vermicelli noodle 
  • different types of vegetables: i used carrots, spinach, green onions.it will be good to use mushroom also! but my mom used my mushroom that i bought :( so, i dont have it anymore. the measurement is kinda blurry . because it depends what you like. i love carrots, thats why im using more carrot. i use 2 big carrots and 1 small package of baby spinach. 
  • salt and pepper to taste 
  • 1 tsp minced garlic 
  • 2 chopped onion 
  • a half of green pepper 
  • Soy sauce 
  • Vegetable oil 
  • Sesame seed oil 
  • Toasted/Roasted sesame seeds (black or white) 
direction: 
  1. Cook the vermicelli noodles. In a large pot, bring water to a boil. Once the water is boiling, add the vermicelli noodles. Ensure that all the noodles are submerged in the water. the package says to boil it for 9 minutes. Then, pour the noodles into a large strainer over the sink. Shake the strainer, toss the noodles with two tablespoon sesame oil and let the noodles sit and drain/dry. Then, add the soy sauce. Pour the soy sauce gradually, When the noodles turn a medium brown color, that is enough soy sauce. 
  2. blanch the spinach. You will cook the spinach for 1 minute in boiling water. Remove from heat immediately, and pour into a strainer over the sink. squeeze the water out of the spinach 
  3. cut carrot thinly and chop the green onions into small 1 cm. 
  4. Stir-fry the vegetables. In a large pan or wok, add 1 tbsp of vegetable oil. First, add the carrots. Once the carrots are half-cooked (about 2-3 minutes), add the peppers. Stir occasionally for only 1 minute. Then, add the garlic and onion. Cook for another couple of minutes until the onionsand garlic are cooked. Add the green onions. Then, sprinkle salt and pepper (to taste) 
  5. pour in the stir-fried vegetables in the bowl of noodles 
  6. Mix gently with your hands. 
  7. Then, add the spinach. 
  8. Add more soy sauce, salt, and pepper (to suit your taste buds). 
  9. sprinkles with 1-2 TBS. of toasted/roasted sesame seeds on top
