lemon cake

I shamelessly going to repost this recipe from joyofbaking because I have tried his recipe twice and this recipe is fault free hehehhehe thank you for sharing. The only thing I did not do is the lemon frosting hehehehe I always use the regular vanilla icing in grocery store hehehe it saves my time a lot when  I am craving for lemon cake :D here we go!!!

Ingredients:
  • 1 cup (230 grams) unsalted butter, room temperature
  • 1 cup (200 grams) granulated white sugar
  • 1 teaspoon pure vanilla extract
  • 4 large eggs, room temperature
  • Zest of 1 large lemon (outer yellow skin of lemon)
  • 2 cups (260 grams) all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup (60 ml) fresh lemon juice

chicken congee

Ingredients:
  • 14 cup cooked rice
  • 2 cups chicken broth
  • 1 pieces boneless skinless chicken breasts
  • 1/2 tablespoon garlic, minced
  • 1 tablespoon oyster sauce
  • 1 tablespoon soy sauce
  • Salt and pepper (according to your taste)
  • 2 tablespoons scallions, chopped
  • sesame oil
  • you tiao

Directions

  1. This is my way of making congee, I got this trick from Mba Cici hehehehhe usually I only use a left over rice then I use hand blender. I add rice and chicken broth in to the blender and let the machine works until congee smooth and no longer grainy lol
  2. Then I boil the rice mixture.
  3. Add pepper and salt.
  4. Meanwhile, I cut the chicken breast and season it with oyster sauce, garlic and soy sauce.
  5. Then I stir fry it with sesame oil then sprinkle with pepper.
  6.  Now for the serving, in a bowl add the congee, chicken, a few drops of sesame oil, chopped scallions and chopped you tiao.
