Ingredients
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar (original recipe using brown sugar and Castor sugar)
- 3 yolks(original recipe using both yolk and egg whites)
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2/3 cup cocoa powder
- 3/4 teaspoon baking soda
- a pinch of salt
how to:
- beat the butter and sugars until light and fluffy
- Add the egg and vanilla extract and beat until incorporated
- turn off the mixer
- sift together the cocoa powder, flour, baking powder, and salt and then add to the butter and egg mixture
- stir it until well incorporated
- Using a spoon, place about 1 tablespoon of batter on the prepared baking sheet, spacing about 3 cm apart
- Bake for approximately 8 - 10 minutes or until the the cookies are still soft in the center but are firm around the edges
tips :
- Remove from oven and let cookies cool on baking sheet for about 5 minutes before removing the cookies to a wire rack to cool completely.
- use only yolks so the cookies will be crispy on the edges but still chewy at the center .
- u can add chopped walnuts or cashew to the batter
