This is what i like to cook in Ramadan for a full meal. either its rice or noodle. It's just too easy to cook this dish at busy Ramadan. Keep in mind that this is happening in Ramadan lol so I don't use fresh produce lol imagine waking up at 3 am to cook for suhoor or cook for iftar in less than 30 minutes after rushing going home from my office. This is the most delicious, instant yet fulfilling dish you can eat.
Ingredients
- 10 ounces noodles
- 1 clove garlic
- 2 shallots
- 5 chillies
- 1 inch piece of ginger, peeled and roughly chopped
- 2 tablespoons vegetable oil
- Juice of 1 lime or lemon
- 2 teaspoons soy sauce
- 1 teaspoons sesame oil, plus more for drizzling (optional)
- 1/2 pound frozen shrimp
- frozen veggies as much as you want
- salt and pepper
Directions
- Bring a pot of water to a boil. Add the noodles and cook as the label directs.
- Meanwhile Mix the lime juice, soy sauce and sesame oil in a small bowl.
- Heat the vegetable oil in a large skillet over medium-high heat. add shrimp to the pan and cook, turning, until just pink.
- Add chopped garlic, shallots and chillies.
- Add the soy sauce mixture
- add the frozen vegetables, mix it
- add noodles
- season more with salt and pepper, mix it.
- serve warm
