Shrimp marinade:
- 6 uncooked medium shrimp
- 1 tablespoons olive oil
- 1 clove garlic, crushed
- Juice of a half lime
- ½ teaspoon chili powder
- Salt and pepper
- 1/2 cup uncooked quinoa
- ½ onion, finely diced
- 4 cherry tomatoes, halved
- tablespoons cilantro, chopped
- ½ tablespoon olive oil
- ½ avocado
- Lime juice
- Peel and devein shrimp and place in a bowl. Add the marinade ingredients, stir it then refrigerate until ready to cook.
- Now cook quinoa. Im gonna link you the video of how to cook quinoa here
- Meanwhile grill the shrimp.
- After quinoa is done . Add avocado , tomatoes, onion, grilled shrimp, cherry tomatoes and cilantro to the quinoa.
- Serve
