chocolate and caramelized banana cake


i have a lot of ripped bananas bc my dad got sick and all he can eats is just porridge and mushy fruits. im kinda wanting a chocolate cake after i made one for my friend yesterday hehhehe so, im kinda combined them :D this idea is popping in my mind suddenly :D its basically a chocolate cake with a banana layer in the center and top it with chocolate ganache :D goody!! and btw, those who love korean drama and love to bake , go watch  ms panda mr hedgehog . its drama of Donghae from superjunior . the cake is all pretty and he is also pretty lol i never watched drama before but this month im starting to watch some :D here is my suggestion, go watch "to the beautiful you" and "when love walked in" :)  hehhehhe ok, now back to the recipe! here we go !

ingredients:
  • 120 cake flour
  • 25 gr cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 60 gr  unsalted butter, at room temperature
  • 60 gr sugar for cake
  • 5 tbsp sugar for caramelizing bananas 
  • 1 large eggs
  • 3 riped bananas
  • 100ml buttermilk
  • 100 gr melted dark cooking  chocolate *for cake*
  • 150 gr dark cooking chocolate *for ganache*
  • 75 ml whipped cream
directions:
  1. Preheat oven to 350 degrees F (175 degrees C). 
  2. Butter and flour the pan. im using a 18 cm round pan
  3. Sift together all the dry ingredients into a large bowl and set aside.
  4. Heat 1/2 cup of the sugar in a large heavy-bottomed saute pan over medium-high heat. Let stand until edge of sugar starts to melt and turn golden. Carefully swirl pan and continue cooking until sugar is a golden-brown caramel. Add bananas, carefully roll in sugar, and cook, turning bananas occasionally until just soft. Transfer bananas into a bowl and mash them.
  5. In a mixing bowl . beat butter and sugar for 3 minutes or until sugar is dissolved
  6. Beat in the egg. stir in well.
  7. Add melted chocolate. stir until incorporated
  8. Add the flour mixture and stir until well combined
  9. last, add the buttermilk and stir until combined.
  10. Pour half of the batter into the prepared pan.
  11. Pour the caramelized mashed bananas on top of the batter and top with the remaining batter.
  12. Bake for 30 minutes
  13. Remove the pan from the oven. Let cool completely .
  14. Meanwhile lets make chocolate ganache to top the cake. melt the chocolate and set aside.
  15. Beat in a mixing bowl, whipped cream based on the instruction (im using the non dairy one) , add melted chocolate and mix until well incorporated
  16. Top the cake with the ganache and serve :)
