Based on wikipedia, A Quiche is defined as an open faced savory tart (pie) filled with a smooth and creamy custard-like filling. The name "Quiche" comes from the German "Kuchen" which means "cake". Quiche originated in the Lorraine region of France and the classic 'Quiche Lorraine' has a filling made with beaten eggs, cream (milk) and bacon. Today, a Quiche can have a wide range of flavors and while it normally has a custard filling, with bacon (or ham, sausage, or some kind of meat), it often includes vegetables and cheese. I choose to make veggies squiche for breakfast. here is the recipe. i combine Maggie, kate and my recipe :)
quiche recipe:
- 125ml sour cream
- 250g plain flour
- 200g unsalted butter chilled
direction:
- To make the pastry, dice the butter, then pulse with the flour in a food processor until the mixture resembles fine breadcrumbs.
- Add the sour cream and continue to pulse until the dough starts to incorporate into a ball.
- Wrap the dough in plastic film and refrigerate for 20 minutes.
- Roll the chilled pastry out until 3 mm thick and cut to suit your chosen recipe.
- baked until golden brown.
filling :
- (200 grams) fresh spinach , boiled for 5 mins
- 1/4 cup diced shallots
- 1/4 cup (60 ml) diced onion
- 1 small garlic clove, minced
- 1 cup of chopped leek
- 1 diced potato
- 1 sweet corns
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 150 ml milk
- salt and pepper to taste
direction:
- In a saucepan, with about 1 tablespoon of butter, saute the diced shallots , onion and leek until soft.
- Season with salt and pepper.
- add the chopped spinach, potato and sweet corn.
- Spread the mixture evenly on the bottom of the prebaked pie crust.
- Sprinkle with the parmesan cheese.
- next, In a large bowl whisk together the eggs and milk.
- Season with salt and pepper
- Pour over the spinach mixture and bake in the preheated oven for about 20 - 25 minutes or until nicely browned, the custard is set, and a knife inserted one inch (2.5 cm) from the edge of the crust comes out clean.
- Remove from oven
- serve
