This is a quick meal whenever I watch Korean drama. So easy, so fulfilling and its still a healthy food :D I can make a big plate for myself only and not feeling too guilty lol
Ingredients
- 2 pounds boiled or steamed shrimp, peeled and deveined
- 2 avocados, cut into large pieces add a squeeze of lime juice
- 1 small Onion
- 1 small chopped tomato
- 1 cup chopped Lettuce
For the Dressing
- ¼ cup extra virgin olive oil
- ¼ cup balsamic vinegar
- salt and pepper, to taste
Directions:
- Add shrimp, avocado, chopped tomatoes, chopped lettuce and onion to a large bowl.
- In another bowl, mix together ingredients for the dressing. Whisk until well-combined.
- Add dressing to shrimp avocado salad until it has the amount you desire. Serve additional dressing on the side.
