potato cheese soup

A perfect weather to cook soup :D a rainy season is here .time for cooking a lot of soup :) here we gooooooooo~

  • 2 medium potatoes, peeled and diced into 1 inch cubes 
  • 2 cups water
  • 1 onion, diced fine
  • 2 tbsp of fluor
  • salt and pepper to taste
  • 1,5 cup of milk
  • 1/2 cup of heavy cream
  • 1/2 cup shredded cheddar cheese
  • parsley    
  1. Bring water to a boil in a medium saucepan.
  2. Add potato cubes and stir to make sure they are just covered with water.
  3. Cook potatoes until fork tender, maybe 10 minutes. mash it and set aside
  4. In a large pot melt butter over medium heat and stir in onion. 
  5. Stir in the flour and cook stirring constantly for at least a minute to get rid of the raw flour taste.
  6. Start adding the milk and cream and stir until smooth.  
  7. Add the shredded cheese. mix it until its melted.
  8. Stir in potatoes and cook for 1 minute to heat potatoes thru. serve with parsley
